Public encouraged to follow these food safety practices in light of cyclosporiasis outbreak

The U.S. Food and Drug Administration (FDA) and the Centers for Disease Control and Prevention (CDC) are investigating a multistate cyclosporiasis outbreak linked to shredded lettuce imported from Mexico and served at a popular fast-food chain, Taco Bell, including locations in Kentucky. Investigations are still ongoing to determine if additional food products may also be contributing to the outbreak.

At this time, the Kentucky Dept. for Public Health (KDPH) advises Kentuckians to continue following these food safety practices when handling and consuming fresh fruits, vegetables, herbs, and berries:

• Choose whole heads of lettuce and leafy greens instead of pre-washed, bagged lettuce or salad mixes when possible.

• Wash all fresh produce thoroughly under running water before eating or preparing it.

• Remove and discard the outer two or three layers of leafy vegetables, then wash the remaining inner leaves under running water.

• When appropriate, cook produce to an internal temperature of at least 158°F (70°C).

• Always wash your hands with soap and water before preparing food and before eating.
